> 3 dayLets start with the bad. The plastic sheath that comes with this knife is awful at best. However I didnt buy a plastic sheath, I bought a giant slicing knife and buddy thats what I got! The knife feels great in the hand. The molded grip lends itself well to the sawing motion you make with the knife. The blade itself is the sharpest thing Ive ever held. It effortlessly cut through ham and turkey with the greatest of ease. My brother and I were trying to see who could cut the thinnest piece of ham. Turns out were goobers that were holding up the line for the the rest of the family but regardless it was amazing. I look forward to using this any chance I get!

Greater than one weekIve wanted a professional, dedicated slicing knife for my culinary tool kit. This one is marvelous. Its beautiful, with a fine blade and practical black plastic handle. The handle feels great - not cheap plastic - and has a good grip to it. The blase is well formed, flexible and has the Victorinox stamp on it (Victorinox actually started making knives before watche and I have an amazing Victorinox watch). This knife will slice meats and fish very, very thin. The scallops on the blade are just the right size and indentation. The knife comes well-sharpened. I was a professional chef and want high-caliber tools. This knife is everything I wanted and hoped to have. Ill end up passing it to my son for him to enjoy as a family heirloom.

> 3 dayThis knife is EXTREMELY sharp right out of the box--be careful! The length is perfect for what I purchased it for, cutting large turkeys or other meats. It has a nice heft to it, but is not too heavy for easy use. Highly recommended.

Greater than one weekThis knife is just very good, the weight, the balance, the blade. It is not a cheap knife but is worth every bit of it. I would have loved an option with a better protective sleeve but I appreciate it came with something.

> 3 dayThe Victorinox knives are always of very good quality and reasonably priced. This knife is perfect for thin (or thick) slices of beef (my primary use for it is brisket) and turkey breast - really any boneless cut of meat of medium to large size. It is probably too wide to be a successful replacement for a salmon slicer of similar length. The Fibrox handle provides an excellent non-slip grip and it holds its edge very well. The only thing preventing a 5 star rating is a nit pick - the bolster projects a tiny bit below the edge of the blade preventing complete contact between the full blade and the cutting board. While in actual use this is not a major issue, it is the only thing holding back perfection.

17-11-2024Made carving nice, thin slices of turkey a breeze. Sliced the skin off a raw pork shoulder with ease (a task that used to be a chore with the kitchen sheers). Trimmed the fat-cap on a pork butt to the perfect depth. The handle is grippy even when your hands are coated in grease. Totally worth the money.

> 3 dayFunny story at how sharp this knife is for reference. I was moving this knife and accidentally nipped an unopened bottle of pop...spewed everywhere! So yeah, this knife is sharp. Beware. My white walls are now sticky with pop residue.
